Kale, carrot tops, beet tops - chop and freeze, use in smoothies or any baked goods or spagetti Beet tops, young kale - eat in salads Kale - olive oil and garlic salt, bake in oven for kale chips Beets - peel with carrot peeler, boil till soft, eat plain or slice in salads, freeze leftovers, bake with anything chocolate or red. I made wonderful red banana bread out of ones I'd had in the freezer for three years. Carrots - fry with butter and brown sugar, dip in peanut butter, juice

And, actually, I think you can start using it right away. Here’s what you’re going to do. Sterilize a small jar or bottle by boiling it in water for 10 minutes. Dry it well. Add 1 Tbsp dried thyme to the jar/bottle. Pour 3-4 Tbsp witch hazel over the top. Shake well. Within 20 minutes, the witch hazel should start to look like a light brown tea. This is good. It means your thyme is steeping well. You can actually use it right away, but continue to let the thyme steep in the witch hazel for a few days before straining the thyme out. Store it in a cool, dark place for up to a month, using when needed. Several people replied in the comments and also more recently on another blog I found that it was working for them.

Just got back tonight from a short family visit. Won't even bother weighing myself until next check-in day, as I for sure didn't lose any weight, probably gained a bit, as I mostly went off my eating plan. Did get a couple of shorter walks in, so that's a plus. See you all next week, and keep up the good work everyone!

Stardust, I love chard, it is the best. You can make salads with other lettuces, or cook it in any recipe for spinach. It is milder and to me better tasting. When you cook it down, chop off the stems first and cook them 5 or ten minutes before adding the leaves. The stems are good too. I like to make it in a casserole or with a sauce. Use the water from cooking it down to make the sauce and you will keep all the nutrients.
Another good way to make the carrots is in a crockpot. You can find some good ones just with Google.
The tops, find your neighborhood rabbit. They like the tops even better than the carrots themselves. :D

Well, down only 0.4 lbs this week, but I'm not too upset as I lost a bunch last week. Have to work at exercise as it is miserably hot here, too. I HATE hot!!! Unfortunately, have no desire to cook in this weather either. Ugh!

I did 20 miles this morning! More importantly I can still walk and no blisters. Working my way up to do 30 eventually. The key is definitely starting early. We started at 3:00 am and finished around 10 am. The last hour or so was starting to get really hot and sun was out strong. Going to go have a large steak for supper as my treat. LL and I walked 20 and his wife and a few friends joined in a bit later and did about 12 so it was a nice group activity.

Wednesday - Check in Day
I worked out hard today, two dog walks and an hour work out solo with the trainer. Although no way I can keep up with rihannsu except in the eating department lol. I wish I could get over the munchies. My jaws are sore from all the gum chewing. I'm basically treading water and going no where.

Ha! I'm kind of lacking in the workout department this week. Didn't walk Monday because I ended up spending all day trying to get my dog to stop throwing up. He's fine now, must have been a short lasting tummy bug. Missed Pilates class because of cramps and skipping the walk this morning for same plus feeling really achy. I'm up a pound from last week but TOM so expected. Good news is Wendy's foot is better so she'll be back walking with me on Friday. Not so easy to wimp out when you have a commitment to meet someone else.

Rihannsu, I am in awe of your walking.
I slacked a bit this week because of the holiday and because it was brutally hot even for here. I managed not to overeat too much on the holiday, though. My exercise since last check in:
3x walk 1x aerobics 1x swim
As far as the fresh foods go, may I recommend cooking fresh black-eyed peas in the crockpot. I cooked them in chicken broth with some fresh okra and tomatoes, garlic and cumin and some liquid smoke. Really great. Also made some sweet potatoes in the crockpot and they turned out great. I used to think the crockpot was mostly useful for cooking soup and chili in the winter but it is also a good way to cook veggies with a lot of taste and not heat up your kitchen so much.
